Curried Crab Salad
Start to finish: 20 minutes.
2 cups cut-up fresh fruit (such as pineapple, cantaloupe, honeydew melon or strawberries)
6-ounce crabmeat (fresh or frozen) if using frozen, thaw
3/4 cup sliced celery
1/4 cup light mayonnaise or salad dressing
1/4 cup plain lowfat yogurt
2 tablespoons fat-free milk
1/2 teaspoon curry powder
4 cups torn mixed salad greens
fresh lemon wedges (for garnish – optional)
In a large bowl combine fresh fruit, crabmeat and celery; set aside.
For Dressing: stir together light mayonnaise or salad dressing, yogurt, milk, and curry powder.
Divide salad greens among three plates. Top with crab mixture and drizzle with dressing.
If desired garnish with lemon wedges, fresh strawberries or raspberries.
